Simple Salad Dressing

Serves 4

Here’s a really simple dressing recipe – it’s really great on fruit salad or just for a change.

Ingredients
1/3 cup vegetable oil
1/3 cup fresh lemon juice
1/3 cup honey

Directions
Put all ingredients in jar with lid; shake until emulsified.  Refrigerate leftovers.

Note: My husband and I like to experiment with different flavored oils and vinegars.  Instead of using white wine vinegar, I substituted Pineapple vinegar.  It was delicious!  Probably a little sweeter than the original, but very light and just right on the lettuce that was in this week’s CSA bag.  I added some diced cucumber, a slice of tomato and a little feta cheese.  Great salad.  I also use Splenda instead of sugar, but with only 1 tbsp., I doubt that this made much difference.

Ingredients
1/3 cup oil
1/3 cup white wine vinegar
2 minced garlic cloves
1 tbsp. sugar
1/2 tsp. salt
Pinch of black pepper

Directions
Mix all together and pour on salad.
